What is Fermentation?
By definition, fermentation is “the chemical breakdown of a substance by bacteria, yeasts, or other microorganisms”.
This natural process has been used for centuries, predominantly as a way to preserve food. Soaking vegetables or fruits in salt water forces bacteria to grow. Lactic acid is then produced as a result of these natural bacteria feeding on the starch.
